This is a blend of spontaneously fermented beers from 2022 and 2023. The beer was then aged in oak barrels. After aging, the blend was macerated with sumac, which imparts a lemony and tangy character, and sage for a herbaceous and slightly resinous note. German chamomile adds a floral touch and hints of pineapple and chamomile.
