After the insane brew produced by our friends at L’Instant (a Triple NEIPA with 20 hops) and the 90-minute IPA we brewed with our buddies at Hôp[i], we definitely needed a 120-minute Imperial West Coast IPA to stand up to the comparison.
Brewed in Dijon, without mustard, this is nothing less than a massive combination of Columbus, Centennial, Amarillo, Chinook, Simcoe, and Warrior hops that have been dabbled in this heavy West Coast IPA.
The bitterness is incredibly smooth with a beautiful aromatic attack from the Simcoe and Centennial, then it develops into resin and hoppy notes, finishing with a bitter orange-resin aftertaste!
It's warming without being boozy, and with just the right amount of malt structure to support the hoppy intensity.
