"Old Ale," brewed in February 2023 with premium Italian and English malts, a generous addition of molasses, and fermentation using a specific strain for high alcohol content. Aged for 30 months in ex-Bourbon Old Forester barrels, it was bottled with minimal carbonation to offer a unique tasting experience. The barrel's potency frames the mellow notes of caramel, hazelnut, dried fruit, and syrup, which, combined with light oxidation, evolve the flavors of a fortified wine, Madeira/Port. The high alcohol content elevates the drink to a true experience, whose complexity continually evolves in the glass.
